Module 1: Sweet successes

Defining the new tastes with less sugar: three industry experts will elaborate on their successes with sugar reduction and offer a new perspective on food innovation! Optimel, Heinz ketchup 50% and Oldtimers sugarfree are inspiring examples of popular consumer products that meet the demand for fewer or no added sugars.

Discover the artisanal craft of ‘less is more’. With Master Patissier Robèrt van Beckhoven we will explore the boundaries of sugar in confectionery and patisserie!

Robèrt van Beckhoven was brought up in the bakery of his grandfather and father. Many years of experience, competitions and prizes later he is both Master Patissier and Master Boulanger. Robèrt is passionate about educating professional and amateur bakers and furthermore has become a famous Dutchman through his role as juror in programs like ‘Heel Holland Bakt’ and the ‘CupCakeCup’.

 

Module 3: Sweet Restrictions

Food manufacturers like Peijnenburg are constantly challenged to manufacture products with less and less sugar. This afternoon will start with an introduction by Rene Groen from Peijnenburg, followed by a discussion on solutions with regard to sugar reductions in food and drinks. IFFI members and invitees are encouraged to share ideas within the privacy of the netwerk.


Team activity | Escape rooms KVL

The rooms of EscapeRoom KVL are a perfect fit with the characteristics of the location: the rich history and appearance of the old Leather Factory KVL. The spacious rooms and challenging games take participants back to the 1970s, when the leather factory knew its heyday with over thousand employees. By crawling in the skin of those former employees, you are accidentally locked up and it is obviously important to escape as quickly as possible!

The place where Robèrt, a true Oisterwijker, started his first job now houses his bread and pastry shop ‘bij Robèrt‘. The rugged industrial setting of the Koninklijke Verenigde Leder is the perfect place to make the production process literally transparent. Through the long glass corridor you can see the bakers and patissiers at work. In KvL you will experience real Brabant hospitality and enjoy home-made dishes.

Registration and accommodation

The IFFI Masterclass programme includes dinner and drinks and excludes eventual accommodation costs. Participation costs for non-members are € 950,– excluding VAT. Participation costs for IFFI colleagues are covered by the membership fee. However, for cancellation of participation after 16th of June we will charge you € 300,–. IFFI can arrange a hotel room for you at Hotel de Leijhof, luxury rooms including breakfast will cost € 96,50 incl. breakfast, excl. city tax.
