With the transition from animal to vegetable proteins many food producers are confronted with challenges such as texture, taste, preservation and color. As the nutritional and functional requirements of vegetable food products will differ, alternative raw materials and ingredients are needed. In other words, the protein transition opens up new opportunities for food innovation in general and innovation of food ingredients in particular.

Jaap Korteweg, founder of De Vegetarische Slager
Jaap Korteweg is the founder of De Vegetarische Slager, ‘World’s first vegetarian butcher! Culinary endulgance with a new look. The traditional butcher without meat or fish.’ The company was established in 2010; at 4th of October – world Animal Day – Jaap opened up his first store in The Hague. In 2012 the first supermarkets in the Netherlands were supplied with ‘vegetable meat’. In the Dutch parliament it was discussed whether ‘vegetarian meat’ was ‘hacked’ from the meat industry. As culinary columnist Mark Bittman addressed in one of its columns in the New York Times: ‘Why use the poor chicken as a machine to produce meat when you can use a machine to produce ‘meat’ that is similar to chicken?’ In 2016 the first international conceptstore is opened in Berlin, followed by others in Israel, Greece and Finland. In 2017 a new production facility – financed by a successful crowdfunding campagne – is built and expected to be fully operational in 2018.

Registration and accommodation

The IFFI dinner meeting programme includes dinner and drinks and excludes eventual accommodation costs. Participation costs for non-members are € 150,– excluding VAT. Participation costs for IFFI colleagues are covered by the membership fee. However, for cancellation of participation after 1 April we will charge you € 150,–. IFFI can arrange a hotel room for you in Hotel Thermen Bussloo, single rooms including breakfast, excluding city tax cost € 109,– and have to be paid upon departure .
